Annette's Easy Sweet Cereal Mix
This is the recipe that we served as a snack to our bus hoppers in April 2013.

4 c. Corn Flakes
6 c. Rice Chex
6 c. Corn Chex
6 c. Crispex
2 c. mini pretzels

1 1/2 c. butter
2 c. brown sugar
1 c. light corn syrup
1 t. salt
2 t. vanilla

Mix cereals in a large bowl.
Cook together butter, sugar, syrup and salt.
Bring to a boil, Simmer 5 minutes.
Remove from heat and add vanilla.
Pour over cereal and mix well.
Pour onto 2 large sheet pans with 2” sides
Bake at 200 for 1 hr. stirring every 15 minutes.
Spread out on a table to cool, separating it a bit so it does not lump.

I have also done this in the microwave in small batches--2 minutes stirring after the first minute on high.
Again spread out on a table to cool.
If I am making a double batch it is basically a 15oz. box of each of the rice chex, corn chex and crispex.

SCONE RECIPE

This is a recipe I found when visiting my mothers family in Virginia. It was one of those must have recipes which we use regularly. Quick and easy and tastes great even on day two after they are prepared. They never make it to day three. Be creative and add various add ins. Cinnamon chips, I hear are really great also. Be creative,

Simple Scones:

Sift together:
2 cups Flour
1/3 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda

Cut in 1 stick of cold butter

Mix together:
1/2 cup Sour Cream
1 egg
1 teaspoon Vanilla

Add to dry ingredients & mix well

Add 3/4 cup White Chocolate Chips
3/4 cup cranraisins

Divide dough into two balls, pat each ball on a floured surface into a 8" circle. Cut into 8 pieces & place on baking sheet.
Sprinkle with coarse white sugar
Let rest 10 minutes
Bake @ 350 12-14 minutes
